Building on our restaurateur culture and constantly concerned about having an impeccable quality, we select with precaution our suppliers and products. We support seasonal products, and those which are coming from a sustainable fishing and an environment respectful agriculture (organic) such as wine, or from fair trade such as coffee.


Our collaborators are educated about the daily eco-friendly gesture and about the waste management, in particular in our laboratory. We use low energy-use appliances and we are committed to reducing our plastic, paper and gasoline consumption.
